Fabio Fiore has successfully elevated traditional Roman cuisine, bringing it into an intimate and refined setting with a strong focus on wine expertise and meticulous ingredient selection. Quanto Basta has long been a hidden gem on Via del Pratello—an area dominated by student nightlife and casual dining—but it would hold its own even among Rome’s highly competitive restaurant scene.
Despite its continued success, the restaurant has remained small and uncompromising in quality, with only 24 seats ensuring a carefully curated and immersive dining experience. Reservations must be made well in advance, but they are always worth it.
One of its defining highlights is the artichoke, prepared with precision according to the seasons. The carciofo alla giudia is simply unmatched—technically and stylistically executed at a level that could place it among haute cuisine dishes. After all, nowhere is it written that Roman culinary tradition must be defined by chaos, abundance, and rusticity. Here, it is honored with elegance, without losing any of its bold flavors.
The fried anchovies, the expertly cooked and emulsified Roman pasta classics, and the delicate yet deeply flavorful tripe all showcase this philosophy—making Quanto Basta a true standout for lovers of refined yet authentic Roman cuisine.
