Tommaso Maio and Flavio Benassi, chef and host, haven’t reinvented anything, yet Trattoria di via Serra remains one of the most successful restaurants in Bologna. Authenticity, honesty, and kindness are the three key values that define this eatery and likely explain its consistent, years-long streak of being fully booked—requiring reservations well in advance and patience from eager visitors.

But how many trattorias have managed to preserve their identity while maintaining artisanal craftsmanship and genuine, high-quality ingredients? Not many, considering the number of restaurants in the city. Its location, just a few meters from the high-speed train station, makes it a prime choice for the ever-growing flow of tourists to Bologna. The clean, homey, and welcoming atmosphere perfectly sets the stage for a menu built on local small-scale producers, seasonality, and refreshing yet wholesome pairings.

The dishes reflect the owners’ Apennine roots and childhood memories, with a strong emphasis on top-quality ingredients, many with Slow Food certifications. This is evident in the stone-ground flours, Mora Romagnola pork from Zavoli, and the selection of dairy products, which play a fundamental role in the kitchen’s creations.

Standout appetizers include tosone (a soft cheese from Bianca Modenese cows) wrapped in pancetta and roasted, grilled cow’s caciotta with prosciutto crudo, ricotta flan with seasonal vegetables, and crescentine (small flatbreads cooked in tigelle) served with cunza, a traditional mountain pesto.

The pasta is exceptional, especially the stuffed varieties: try the silky tortelloni filled with Bianca Modenese ricotta, dressed with butter and sage, or the tortellini cooked in rich broth. The menu also features rustic, home-style mushroom dishes when in season.

Flavio is a true host—attentive, warm, and genuinely welcoming. The wine list is well-curated, with a strong focus on native grape varieties and local producers, perfectly complementing the trattoria’s philosophy.
