Founded in 2016 from an idea by Marco Salicini, over time it has become a reference point for information on the restaurant industry of the Metropolitan City of Bologna, standing out for its sensitive, curious, and impartial approach in narrating both traditions and current trends.

Over the years, it has achieved significant results in terms of online positioning and indexing, actively participating in temporary events, industry initiatives, consultancy, and presentations related to Bologna’s food and wine scene.

The new website, launched in 2025, preserves its original identity while adopting a contemporary graphic restyling, divided into two sections:

  • News: featuring weekly interviews with restaurateurs, updates from the city, and food and wine projects.

  • Map: a detailed, descriptive, and geolocated list of all selected venues, organized by category: traditional cuisine, fine dining, pizzerias, ethnic, street food, beyond dinner, and Bologna’s history.

The Map, available in both Italian and English, is designed for locals as well as Italian and international tourists. It will be distributed through Bologna Welcome channels and hotels affiliated with Federalberghi, making Gourmettoria a reliable and present bridge between restaurateurs and consumers. The venues included will feature both Fipe Confcommercio members and non-members, demonstrating a careful and inclusive selection process carried out independently, based on qualitative standards, and complemented by a photographic service for all listed establishments.

The goal is to strengthen an updated and authoritative reference point capable of narrating Bologna’s gastronomic culture with commitment and dedication, reflecting the passion behind local restaurant projects, and aiming to further enhance the Emilian capital and its territory.

Marco Salicini

Marco Salicini

Born in Bologna on February 22, 1991, he has always been in love with his city, which he follows daily with interest, a strong sense of belonging, but also a critical eye.

He turned his passion for Bologna into a profession, first as a journalist and later as a consultant.

Through his association Stay Serena, he promotes the local area by focusing on social development and fostering a spirit of community.

Gourmettoria was founded in 2016, during a period of change and growing tourism. It represents an incentive to believe even more strongly that, through gastronomic culture, the city can open a meaningful and forward-looking dialogue with the rest of the world.

Carolina Negroni is a freelance photographer and artist from Bologna, specializing in events and food & beverage.

Through her lens, she tells stories of places, people, and flavors, weaving together attention to detail and emotional sensitivity. After earning her bachelor’s degree at the Academy of Fine Arts in Bologna, she continued her studies for two years at the Brera Academy, refining a language that bridges professional practice and artistic research.

Alongside her work, she has showcased her personal projects in solo exhibitions at galleries and cultural venues. She lives and works in Bologna, her hometown, which she continues to explore every day with her camera around her neck.
