From 6 PM, a lavish buffet set on a stunning communal table—facing a dazzling bottle display—draws in guests, who are then refreshed by the masterful touch of bar manager Vlad Taci.

With sophisticated techniques, lacto-fermentation, fat-washing, and a strong no-waste philosophy, the cocktail menu boasts a bold selection of spirits. The walls—and often the drinks themselves—feature references and tributes to Bologna’s iconic symbols, intentionally celebrating the city at a time of transformation, shaped by globalization and international influences.

Classic recipes shine—especially those based on gin and vermouth—while daring new creations intrigue, such as the Real Reversal (caramelized fino sherry, tonka bean tincture, pineapple soda), Therroni (pomegranate rosolio, gin, Savoia aperitif, lemongrass bitter), and Wrong Spritz (Amaro Santoni, exotic cordial, matcha soda, frizzy).
