The return to true Chinese cuisine is finally reaching Europe: after decades of tamed menus, travel and curiosity have opened the way to more authentic, regional flavors. But the rush to expand the offer does not always correspond to quality and truthfulness.

Bao Bros, on Via Nazario Sauro, is an exception: Lussa and Luxi Zhu have created a small dumpling shop that pulls you out of the city context, with crisp, spotless interiors, an open kitchen, and a smiling, impeccable Chinese staff. Behind it lies long family experience (those seeking more classic dishes can look to Singapore on Via Lombardia).

Here the offering stands out: a personal atmosphere, evident quality, and a walk-in format that works. Everything is made to order and in full view — from the delicate gestures with which the staff seals the dumplings to the measured cooking times, without those “suspiciously” fast rhythms typical of certain Asian kitchens.

The bao and dumplings follow home traditions: imperfect shapes, fresh doughs, and unforgettable fillings (the pork above all). From steamed bao with 30-hour marinated pork or tofu-shiitake, to the juicier grilled versions, to the wontons with peanut sauce and the crystal dumplings: every bite conveys authenticity and care through and through, including the sweet egg and mango options.

Craft beers, a touch of grappa, and a bill that rarely exceeds 20 euros complete an experience that, despite its recent opening, is already among the most authentic in the historic city center in these terms.
