Opened in 2016, before the “boom” of venues crowding the area around the Mercato delle Erbe, Oltre was the first to infuse Bolognese cuisine with a metropolitan slang. Other great places have since opened, yet the atmosphere of this dining room offers a true escape from the city like few others, evoking the allure of major international capitals.
Daniele Bendanti is one of the most respected and admired chefs in Bologna’s national gastronomic scene. All the major guides continue to praise his concept, and he regularly earns individual awards and accolades. His menu dives even deeper into his personal narrative—understandable and accessible to all—thanks to his loving devotion to traditional cuisine and the influence of his grandmother, pursued with great quality. To this foundation, he adds intersections, contaminations, and memories drawn from his travels. Techniques, ingredients, and philosophies span from South America to the East, Africa, and even Northern Europe.
Precision in the cooking of pasta and meats remains central: outstanding in the torchio spaghetti with arugula pesto and toasted cashews—chewy, bitter, and rounded by the nut; the garganelli with gurnard, caper powder, and nori seaweed, delightfully briny; and the fail-proof tortellini creamed in Parmigiano sauce. The pigeon is masterful and electrifying—an inspiration from his time at the esteemed Arnolfo, now made his own. It is meticulously prepared with breast, leg, jus, liver tulip, and a side of smoky, spongy morels—celebrating top-quality ingredients.
Other standout dishes include sweetbreads mellowed and brightened with sweet-and-sour pineapple, fennel, and mustard—worthy of tasting on their own for their fire-handling finesse. Vegetarians will find satisfying alternatives that deviate from traditionally fatty fare. Oltre has always found the right balance with digestibility, like the tomato tartare with barbecue sauce that evokes the sensation of red meat.
Even the desserts show strong personality—French in origin but evolved beyond their homeland roots. The young dining room staff delivers wide smiles and perfect pacing, led by the generous kindness of Claudia Tarallo and completed by the cocktail mastery of Lorenzo Timiani. Too little is said about this young man’s mixology skills, which have always set Oltre apart. His well-balanced signature cocktails enhance aromas and spotlight ingredients.
