It’s not just about the subtlety and careful leavening of the dough—DaZero’s pizza, which arrived in Bologna’s city center in 2022 after a series of successful openings, stands out for its vision.

The three majority partners have exported from Cilento a toponymic Mediterranean culture, represented and embodied by carefully selected small artisans who are co-authors of the menu’s identity, now branching into major cities across Northern Italy. This philosophy is summed up in the concept of Incontro (“Encounter”), which, at the opening of the menu, proudly and transparently tells the story of the origin of the ingredients—highlighted in gold throughout the recipes.

An admirable and ambitious project that, over time, has earned major accolades, testifying to the values of traceable supply chains and the Mediterranean diet—as recognized by the Pizza UNESCO Contest in 2017, and later by Gambero Rosso, Slow Food, and 50Top Pizza.

The flavors of Cilento have found a prominent stage across Italy, thanks in part to the drive of Giuseppe Boccia, who not only brings his local artisans’ products to the pizzas, but also showcases them through the kitchen and fried specialties. A noteworthy selection of wines and craft beers—anything but ordinary—faithfully aligns with DaZero’s founding philosophy.
