fiordisalebologna.itMetropolitan atmospheres linger in the air, as international traits emerge, inspired by a setting where European design coexists with artisan collections, ethnic artifacts, botanical walls, and floral compositions arranged in a dedicated corner shop. The concept restaurant-bar by Nicola Annis and Salvatore Duò is both an outlet and an alchemic expression of their previous know-how in the field of intercontinental consulting. Pivotal and decisive was the meeting in Paris with Salvatore Castiglione, a bar manager of European renown, who at Fior di Sale in Via Altabella oversees bartending in all its processes.
In the dedicated workshop, creativity is given free rein to evolve a botanical approach that has been meticulously refined over years of professional experience. A green narrative that comes to life from the greenhouse to the lab and then to the counter, taking shape in artisanal infusions, shamanic blends that are produced and bottled in-house, recipes of great depth with acetic tones, balsamic nuances, bitter structures, and intense aftertastes. These are crafted on-site by young bartender Stefan Bogdan, who offers aromatic signature drinks alongside international classics served straight or aged in jars (unmissable: the smoked Boulevardier, the MiTo, the rhubarb Negroni, the Aviation), as well as house-made liqueurs and cordials. Mixology here creates both a pre- and post-dinner experience, or pairs structurally with the meal, a pairing further elevated with the arrival of chef Alessandro De Agostini, who, like Castiglione, has worked professionally with Bruno Barbieri before moving on to Don Giovanni with the talented Pierluigi Di Diego, and then spending seven “Bolognese” years at Osteria Bartolini.
The theme, the imprint of the menu, is a Mediterranean journey expressed through aromas, spices, essences, and flavors—from Lebanon to Syria, from Sicily to Greece, all the way to the Middle East, Sardinia, and Spain—“meze” to be shared among all diners in a well-curated tasting at an enviable quality-price ratio. One can also enjoy the experience with a selection of natural wines that is anything but ordinary, often highlighting female producers, and frequently accompanied by a live concert.
