During the height of the pandemic, Giuseppe Doria opened a one-of-a-kind venue—an act of true Italian resilience and a tribute to rebirth, aptly named Volare in homage to Domenico Modugno. Almost unintentionally, he created a trend that defies current fashions, reviving the spirit of the classic Italian bar and the 1960s aesthetic.

The vintage setting features a jukebox, a football betting board, an old-fashioned espresso machine, a gum-ball dispenser, a UL-1 corded telephone, and other collector’s items. At the counter, Peppe, “the host of bartending,” alongside Roberto, embraces a philosophy of ingredient reduction to enhance the purity of flavors, restoring forgotten liqueurs and evocative recipes. The Italian aperitivo is served in its most authentic form, with standout signature cocktails like the Fellini (bitter, lemon, aged balsamic vinegar, and Sanbitter Dry), along with masterful takes on the Martini, Americano, and other captivating creations like Atene and Amore Amaro.

The drink list is periodically dedicated to a specific spirit, and guest appearances from renowned figures in the mixology scene are a regular feature. In 2025, Volare enters the ranking of the world’s top 500 bars. Additionally, a private lounge offers themed tasting evenings paired with cuisine. Leaving the venue at the planned time is nearly impossible—before departing, one is inevitably enchanted by the house Rosolio or a vintage Biancosarti from its golden years.
