An innovative take rooted in tradition. The idea of Edoardo Malvicini and Andrea Liotta gained traction in 2019 when they spearheaded the revival of the crescentina, a traditional fried bread that had nearly disappeared from trattoria menus—along with most fried foods—only to make a strong comeback.

They adapted the crescentina to modern consumer preferences by making the dough vegan, eliminating lard, and using organic ancient grain flours for better digestibility. A meticulous fermentation process and made-to-order frying further refined the product. Their redesigned ghigno shape made it a convenient street food, perfect for eating on the go in Bologna.

In just a few years, Indegno has grown to three locations within the city walls, a food truck, and even a store in London. It has been recognized as the best street food in the region and ranked among the top 100 emerging food brands in the UK.

Quality ingredients are at the core of their concept, with carefully selected artisanal suppliers and seasonal recipes that change monthly. The result is a light, airy bite that balances the softness of the dough with premium fillings. Signature creations include:

  • L’Indegna, with ArtigianQuality mortadella from Scapin

  • L’Incontro, featuring 24-month aged Parma ham and Comellini squacquerone cheese

  • L’Extratina, filled with house-made ragù and creamy squacquerone

  • La Fichissima, a decadent combination of Parma ham, burrata, hazelnut crumble, and caramelized figs

They also offer portable delights like fried tortellini and cappellacci, along with numerous creative vegetarian and vegan options.
