The bite is direct, indulgent, and punchy — “junk & juicy,” as Americans would say. Young Giacomo Ragonesi, who runs two trattorias in Bologna focused on fresh handmade pasta and local producers from the surrounding hills, proves he can also look beyond tradition. Together with his inseparable partner Andrea Scibilia, he ventured into street food with a high-quality take on American-style smash burgers.
Here, the meat is carefully and responsibly sourced, resulting in a product that remains accessible yet crafted with integrity. Forget the over-refined “gourmet” versions that have dominated recent years: these smash burgers aim to melt the cheese perfectly and release the juices of the patties in a single, messy, flavorful bite — one that greases your fingers and cheeks in the most satisfying way.
It’s hard to ignore the fries — including sweet ones — or the chicken nuggets, well above average for crispness and juiciness, a clear sign of mastery over oil temperature and cooking time. The drink selection could use improvement. Jack Burger, a playful nod to a famous international chain, also hits the road as a food truck, appearing at festivals, parks, and local events.
