The seven indulgent layers of ragù and béchamel, once a Sunday staple in Bolognese homes, were disappearing from local osteria menus. Traditionally hesitant to order such a nostalgic dish outside their grandmother’s kitchen, Bolognese locals have changed their minds thanks to Riccardo Dispinseri and his partners. Since 2022, they’ve made lasagna a part of daily life again by reimagining it as street food — without compromising its authenticity.

Lasaway first launched its rolled lasagna and now offers it on a stick, Petronian-style, with a crispy top and classic green pasta layers filled with ragù and optional Parmigiano cream. Other creative versions include lasagna chips, inspired by the coveted crunchy corners of grandma’s baking tray, and bite-sized lasagna balls — also available in vegetarian options. Guests can enjoy their food at outdoor tables, with a view of the Portico dei Servi and the iconic Two Towers, making lasagna no longer just a Sunday ritual.
