The street food that most impressed the Gambero Rosso Guide in its 2025 edition is Ragù. Once again, the Ruggine collective has hit the mark, anticipating future trends. In 2017, they opened the first location in Via Goito: a fully Bolognese take-away concept that transformed the city’s culinary tradition into street food.

The secret to its success lies in heart and nostalgia, blending grandmother’s recipes with a contemporary vision and sharp business sense. Inside the handmade buns, their irresistible Bolognese sauce comes in both a “by-the-book” version and a more adventurous one featuring offal, pancetta, and chicken livers. Its stylish yet authentic appeal quickly won over students and young people, who later brought their parents and grandparents along.

Over time, others have tried to replicate the model, digging into traditional Bolognese recipes to find the perfect street-food-friendly dish with a focus on sustainability. The second location in Piazza Aldrovandi—an area revitalized by new, exciting businesses—combines Ragù’s signature dishes, including handmade balanzoni, gramigna, and tagliatelle, with a curated selection of artisanal wines and Draft Cocktails: expertly crafted drinks on tap by Ruggine. More than just a gastronomic lab, Erre Lab is a creative hub in constant motion.
