Rossana Volpi is one of the most astute and dedicated restaurateurs in the city. Long before it became a trend, she introduced the idea that seafood cuisine could be an everyday option, accessible to all budgets and appealing to a younger audience. She achieved this through the versatility of her various dining formats, all strategically located in the historic center.

Her locations are no coincidence: Pescheria San Gervasio sits right in front of the entrance to the Mercato delle Erbe, at the heart of Bologna’s bustling nightlife. With daily fresh seafood, crispy fried bites, and flavorful seafood tapas, the venue has been lively since aperitivo time. A similar approach was taken in Piazza Aldrovandi, an area currently undergoing a successful revitalization, largely driven by the restaurant scene. Her Pescheria Aldrovandi encouraged others to invest in the square, sparking a wave of new openings.

During the pandemic, she took a bold step with Sorbole Que Tapas, a more dynamic and sustainable concept. Positioned in a kiosk in front of the fish shop, this Iberian-inspired format focused on shared dining and excellent value for money, quickly becoming a hit among younger crowds and inspiring many fellow restaurateurs.

In 2025, she takes things a step further by blending Iberian and Abruzzese influences. The menu will feature irresistible grilled arrosticini (lamb or beef skewers), alongside seafood skewers and hand-carved jamón ibérico served with pan y tomate—a true feast for sharing.
