www.sentakuconcept.comTwo years after my last visit, returning to Sentaku Ramen Bar in Bologna proved to be a thrilling experience. Since the pandemic, the izakaya-style venue in Via delle Lame is now solely managed by co-founder Claudio Alessandro Musiani, with a new chef at the helm — yet the essence remains unchanged. Sentaku has preserved its unique, no-reservation format: diners order by pencil from a paper menu, seated at wooden stools around the open kitchen.
Stepping into Sentaku feels like being transported to Tokyo — intimate, immersive, and emotionally resonant. It’s more than a meal; it’s a restorative ritual. The kitchen has found his calling here, combining local meats and vegetables with authentic Japanese techniques. The ramen bases follow classic structure (tare, broth, noodles, toppings), with exceptional attention to detail: slow-cooked broths (up to 10 hours), perfectly textured noodles, layered spice, and umami-rich depth.
The menu features six ramen variations, including standout bowls like the Tori Paitan (spicy chicken broth with chashu, marinated egg, bamboo shoots, and nori) and the Shi-s-o (chicken-pork broth with shiso pesto and dual chashu).
The sides are just as impressive: fried gyoza with crispy edges and juicy filling, a vegan Korokke with Otafuku sauce that surprises with its flavor, and an addictive karaage served with Japanese tartar sauce. Add in fluffy bao buns and a sake list with over 8 options, and you’ve got a complete, electrifying dining experience.
With most meals under €20, Sentaku delivers visionary Japanese cuisine at an exceptional value — a rare gem that merges quality, character, and culinary depth with unmatched consistency.
