What began as a transformative experience abroad has blossomed into a bold entrepreneurial venture. After spending time in Mexico, brothers Gianluca and Gabriele Ramazza brought Bologna its very first authentic taqueria, opening Maiz near the Sant’Orsola Hospital in the Cirenaica neighborhood.
Though compact and stylish—featuring a counter, open kitchen, and a few stools—Maiz is primarily focused on delivery and takeaway. Through meticulous research and partnerships with select suppliers capable of sourcing genuine Mexican ingredients, Maiz has quickly gained recognition. In just a few months, it has drawn the attention of fellow chefs and collaborators, becoming a hub for Latin culinary events across the city.
The menu showcases carefully crafted preparations that highlight the depth and authenticity of Mexican cuisine. Corn tortillas are filled with options like marinated pulled pork and red onion, roast chicken with guacamole and pico de gallo, spiced ground pork with roasted potatoes and lime mayo, or marinated pork loin with fresh pineapple. Classic pairings like bollito with onion and coriander also stand out, offering a rich interplay of sweet-sour contrasts, acidity, and versatile spices.
Burritos are another highlight, with wheat tortillas wrapped around tomato rice, black bean hummus, guacamole, chorizo, and various meats. A standout is the Breakfast Burrito, combining beef, chicken, pork, pickled jalapeños, and chipotle mayo. Side dishes like nachos, salads, and roasted potatoes pair beautifully with homemade salsas and a curated selection of Mexican craft beers and beverages—rare finds in Bologna.
