Not always, as in this case, does quantity correspond to quality—especially among the newer businesses that in recent years have taken over, exploiting an area crowded with tourists. This, however, is not the case with entrepreneur Wu Xianmin—known to everyone as Amin.
He arrived under the Two Towers in 2006, first as a dishwasher, then as a barman and waiter. A career cultivated from the ground up, which, with ambition and clear ideas, led him to open successful bars and an ice cream shop, before deciding three years ago to dedicate himself entirely to the restaurant business. A winning choice: his The Man and the Sea quickly drew the attention of the most important food guides, but above all it won over the people of Bologna.
One can settle in for an elegant aperitivo at the American bar counter, where ample space is given to the most classic international recipes, as well as to a few signature creations mixed with premium products. At dinner, the menu’s direction was born from a meeting of minds with chef Vittorio Cameli, whom Amin met on holiday. The Marche inspiration, recalling his roots, in this case blends with Mediterranean influences, finding an effective balance between reinterpreted recipes and high-quality ingredients.
On the raw materials front, there is great satisfaction: in this kitchen they are respected and guided through flavors that are always clean, understandable, and directly aimed at taste. Whether sourcing from fishermen of the Adriatic and Tyrrhenian Seas, or venturing to Croatia, Galicia, or France for oysters, the benchmark here is not necessarily zero kilometers, but rather the ethics and quality of the seafood.
